Chipotle Cilantro Marinated Chicken


1 cup Chipotle-Cilantro Infused Extra Virgin Olive Oil

4 tablespoons garlic, chopped

3/4 cup cilantro leaves, coarsely chopped

2 tablespoons ground chili powder

salt and pepper to taste

1 roasting chicken, about 3 1/2 – 4 pounds


To make marinade, whisk first 4 ingredients together. Add salt and pepper to taste. Refrigerate until needed. Wash and dry chicken. Thoroughly rub whole bird with Chipotle-Cilantro marinade, cover, and put in refrigerator for at least 8 hours or overnight. When ready to roast, remove chicken from refrigerator. Preheat oven to 375 degrees. Roast 1 1/2 to 1 3/4 hours, or until internal temperature registers at 165 degrees.
